dc.description.abstractIlıman iklim kuşağında yetiştirilen ve kültür tarihi çok eskilere dayanan elma (Malus communis L.) dünyada üretimi ve tüketimi yaygın olması ile beraber ülkemizin gerek anavatanı olması gerekse elma yetiştiriciliğine çok uygun yörelere sahip olması nedeniyle geniş bir üretim alanına sahiptir. Bu araştırmada; Çanakkale yöresinde yetiştirilen elma çeşitlerinin ayrıntılı pomolojik özellikleri belirlenmiş bunun yanında, ticari elma çeşitlerinin çok önemli bir özelliği olan aroma bileşikleri, GC/MS (Gaz Kromotografisi / Kütle Spektrometresi) kullanılarak belirlenmiştir. Çalışmada `Mondial Gala?, `Golden Reinders?, `Red Chief?, `Starkrimson Delicious?, `Golden Delicious?, `Granny Smith?, `Fuji? ve `Pink Lady? elma çeşitleri Çanakkale yöresindeki özel üreticilerden temin edilmiş ve uygun hasat zamanlarında toplanmıştır. Araştırma sonunda elma çeşitlerinden toplam 27 adet ucucu bileşik tespit edilmiştir. Bunların 1 tanesi asitler, 6 tanesi alkoller, 5 tanesi C6 Bileşikleri, 10 tanesi esterler, 2 tanesi terpenoidler, 1 tanesi aldehitler ve 2 tanesi diğer bileşiklerdir.
dc.description.abstractGrown in the temperate climate zone based on a very old history and culture of apple (Malus communis L.) is common in the world with production and consumption of apples growing in our country as well as the need to be the homeland of the regions is very convenient because of its large production area. In this study, a detailed pomological characteristics of apple cultivars grown in Çanakkale determined as well, which is very important feature of the commercial varieties of apple aroma compounds were determined by using GC/MS (Gas Chromatography / Mass Spectrometry). In this study `Mondial Gala?, `Golden Reinders?, `Red Chief?, `Starkrimson Delicious?, `Golden Delicious?, `Granny Smith?, `Fuji? and `Pink Lady? apple varieties were investigated at appropriate harvest time. The fruits were collected from private orchards in Çanakkale region. Total 27 different volatile compounds were found from apple varieties. Finally, 5 compounds of C6, 10 compounds of esters, 1 compound of aldehid, 6 compounds of alcohols, 2 compounds terpenoids and 2 number of other compounds.
